There are so many things you can do with over-ripe bananas! These cookies are one of my favorites. Who knew banana cookies were a thing, right? They taste incredible and are super moist and chewy on the inside.
CHEWY BANANA CINNAMON GLAZED COOKIES
YIELD: 18 cookies | PREP TIME: 15 minutes | COOK TIME: 12 minutes | COOLING TIME: 5 minutes|
TOTAL TIME: 32 minutes
Ingredients:
COOKIES
1 ½ cups
all-purpose flour
½ teaspoon
baking soda
1
teaspoon baking powder
1
teaspoon salt
½ teaspoon
cinnamon
½ cup
butter, room temperature
½ cup
granulated sugar
½ cups
brown sugar
1 egg
1
teaspoon vanilla
1 ripe
banana
GLAZE
1 cup
confectioners’ sugar
1 ½ tablespoons
water
Pinch of
cinnamon
Directions:
Preheat
oven to 350°F
and prepare 2 baking sheets with parchment paper.
Combine
the flour, baking soda, baking powder, salt, and cinnamon in a small bowl. Set
aside.
In a
medium bowl, combine the butter, sugars, egg and vanilla and mix until
incorporated. Add the flour mixture and mix until well combined. Lastly, mash
the banana into the dough. The dough will become more like a very thick batter.
Drop tablespoon-sized balls of dough
and then place them on your baking sheet. Bake for 12 minutes then transfer
cookies to a wire rack and cool for five minutes.
Begin making the glaze by combining the confectioners’ sugar,
water, and cinnamon and mix until very smooth. Drizzle the glaze onto the
cooled cookies.
Store cookies in an airtight container at room temperature
for up to 1 week, or freeze.
