CHEWY CHOCOLATE PEANUT BUTTER COOKIES
YIELD: 2 dozen | PREP TIME: 15 minutes | CHILLING
TIME: 1 hour | COOK TIME: 10 minutes | COOLING TIME: 5 minutes | TOTAL TIME: 90 minutes
Ingredients:
1 ½ cups
all-purpose flour
½ cup
cocoa powder
¼
teaspoon salt
½
teaspoon baking soda
½ cup
butter, room temperature
½ cup
granulated sugar
½ cups
brown sugar
1 egg
¼ cup
creamy peanut butter
1
teaspoon vanilla
2 tablespoons
milk
Directions:
Combine
the flour, cocoa powder, salt, and baking soda in a small bowl. Set aside.
In a
medium bowl, cream the butter with an electric mixer at medium speed, about 1
minute. To this, add the sugars and continue to until well combined. Beat in
the egg and peanut butter. Add the flour mixture in small parts and mix until
well combined. Lastly, mix in the vanilla and milk.
Chill
cookies dough for at least 1 hour, or up to 48 hours.
Preheat
oven to 350°F
and prepare a baking sheet with parchment paper. Roll tablespoon-sized drops of
dough into balls and slightly flatten and then place them on your baking sheet.
Bake one dozen at a time for 10-12 minutes then transfer cookies to a wire rack
and cool for five minutes.
Store cookies in an airtight container at room temperature
for up to 1 week, or freeze.
