Strawberry Vanilla Cupcakes


Today I baked these lovely, fresh, summer cupcakes. These are vanilla cupcakes with a strawberry buttercream- yum! I used Sally's vanilla cupcakes recipe, which is so amazing. It's my all time favorite vanilla cupcakes recipe, since I have yet to create my own. Vanilla cupcakes have always scared me because they are so hard to get the perfect vanilla flavor. Sometimes vanilla cakes turn out too floury.

These vanilla cupcakes taste delicious with my strawberry buttercream, which is so sweet and refreshing!



STRAWBERRY VANILLA CUPCAKES 
YIELD: 1 dozen | PREP TIME: 15 minutes | COOK TIME: 20 minutes | COOLING TIME: 25 minutes| TOTAL TIME: 60 minutes

Recipe: Sally's Baking Addiction

Prepare frosting while the cupcakes are in the oven. Allow cupcakes to cool for 25 minutes before frosting. 

STRAWBERRY BUTTERCREAM

Ingredients:

½ cup butter, room temperature
3 tablespoons heavy whipping cream
2 cups confectioners’ sugar
1 ½ teaspoons vanilla extract
¼ cup fresh strawberries, chopped

Directions:

In a medium bowl, whip the butter on high for 2 minutes, then add the whipping cream and beat for another 3 minutes. Reduce the speed to medium and add the confectioners’ sugar in small parts. Add the vanilla and strawberries, and continue to whip on high for another couple minutes until the frosting is nice and fluffy.


Store cupcakes at room temperature in an airtight container for up to 2 days, or refrigerate up to 5.
